Fresh Tuna Spring Rolls

Ingredients:

– 1 tin shredded tuna in water
– 1 avocado
– 1 carrot,  shredded
– Handful of basil, shredded
– 1/2 round of feta, crumbled
– 1 tbsp. light mayonnaise
– 4 sheets of rice paper

Method:

1. Mix tuna, avo, feta, basil and mayonnaise together

2. Wet the rice paper and scoop 1/4 of tuna mixture into the middle.

3. Lay some carrots on top and roll rice paper into a spring roll.

4. Repeat with the rest and enjoy!

Makes 2 servings
