Zucchini Fritters


– 1 pack of zucchini,  grated
– 1 onion,  diced
– 2 rounds of feta,  crumbled
– 1 clove of garlic,  minced
– 1 tbsp. chopped fresh mint
– 2 eggs
– 2 tbsp. Flour
– Olive Oil (to pan fry)


1. Grate zucchini and leave in a colander with some salt to drain (30 minutes)
2. Add the rest of the ingredients to a bowl and mix thoroughly
3. Once zucchini has been drained of excess moisture, add to the rest of ingredients
4. Heat some olive oil in a pan and spoon about a heaped tablespoon of the mixture into the pan
5. Fry until golden and then flip over
6. Repeat with the remaining mixture
7. Serve and enjoy
