Pad Thai Zoodles



For the Zoodles:

For the Sauce:

  • ¼ cup Fresh Lime Juice
  • 2 tbsp. Lite Soy Sauce
  • 2 tbsp. Honey

For the toppings:

  • 1 cup Mung Beans
  • 2 tbsp. Peanuts, Roasted and Crushed
  • 1 Red Onion, sliced
  • 1 tbsp. minced Garlic
  • 1 tbsp. crumbled Feta


  • Cook the Zoodles as per recipe
  • In another pan fry the onion and garlic in a dash of olive oil
  • While that simmers, mix all of the sauce ingredients in a small bowl.
  • Add the Zoodles into a large bowl, and then add the cooked onions and the sauce.
  • Add the rest of the topping ingredients and mix together
  • Serve and Enjoy!
