For the Zoodles:
For the Sauce:
- ¼ cup Fresh Lime Juice
- 2 tbsp. Lite Soy Sauce
- 2 tbsp. Honey
For the toppings:
- 1 cup Mung Beans
- 2 tbsp. Peanuts, Roasted and Crushed
- 1 Red Onion, sliced
- 1 tbsp. minced Garlic
- 1 tbsp. crumbled Feta
- Cook the Zoodles as per recipe
- In another pan fry the onion and garlic in a dash of olive oil
- While that simmers, mix all of the sauce ingredients in a small bowl.
- Add the Zoodles into a large bowl, and then add the cooked onions and the sauce.
- Add the rest of the topping ingredients and mix together
- Serve and Enjoy!
